Christmas Recipe - Cranberry-Wine Sauce

I'm a huge fan of all things Christmas (much to the annoyance of my lovely Husband)! I have a tradition of assembling and decorating the Tree at the end of November whilst sipping on chilled champagne with strawberries and singing along to my favourite Christmas tunes. I even turn the air conditioning on extra cold and imagine I'm in a Winter Wonderland.

Apart from the excitement of tearing the paper off presents, there is nothing more enjoyable than sitting down with loved ones on Christmas Day and devouring a sumptuous feast.

Anyone who knows me well enough, will know that gravy is not my forte! If guests are over for a roast dinner I delegate the gravy making to one of them. To this date I have not mastered the art of gravy. However, one recipe I believe I have mastered is Cranberry-Wine Sauce for the Christmas Turkey. It is a simple recipe and if I can perfect this, so can you!

  • 1/2 Cranberry Sauce out of a glass jar (no preference with brand)
  • 1/3 cup Red Wine
  • 1/3 cup Chicken Stock
  • 1/2 Cinnamon Stick
  • 1 piece Orange Rind (about 2cm wide and 6cm long, without the white pith)

Whilst your Turkey is joyfully baking in the oven, place all the ingredients in a small saucepan. Bring to the boil, stirring until evenly combined. Reduce heat to medium and simmer for approximately seven (7) minutes or until slightly reduced. Cool slightly and remove rind. Pour into a bowl for serving.

As I said, it is simple, and being biased, tastes fantastic!
